CHOCOLATE POUND CAKE



Ingredients

  • 1/2 cup (i stick) unsalted butter, at room temperature
  • 3/4 cup sugar
  • 2 large eggs, room temperature
  • 1 tsp vanilla extract
  • 1 Tbsp espresso powder
wet ingredients
  • 1/2 cup sour cream
  • 1/4 cup milk

dry ingredients
  • 1 cup plus 2 Tbsp all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1/2 tsp salt
  • 1/2 tsp baking soda

ganache topping
  • 3/4 cup heavy cream
  • 6 ounces dark chocolate chips (or chopped chocolate)

Instructions

  1. Set oven to 325F
  2. Spray a standard 9x5 loaf pan and line it with a sheet of parchment paper, leaving the ends to hang long. This way you can lift the frosted cake out for cleaner cutting.
  3. Cream the butter and sugar until light and fluffy. Beat in the eggs, one at a time, then the vanilla and espresso powder.
