Scottish crumpets


  • 2 Tbsp caster (superfine) sugar
  • 1egg
  • 3/4 cmilk
  • 1 call purpose flour
  • 1 pinchsalt
  • 3/4 tspcream of tartar
  • 1/2 tspbaking soda
  • ·shortening or cooking spray
  • ·butter for serving


    • In a giant bowl, whisk the sugar and egg till thickened and pale in color. Stir in 2/3 cup of the milk till well blended .
    • Add the flour, salt, and cream of tartar and mix till swish.
    • combine the hydrogen carbonate with the remaining milk and stir into the mixture.
    • Heat a lubricated griddle or serious, giant cooking pan. Add giant spoonfuls of the batter and cook over medium heat till golden brown on the lowest and bubbles area unit forming and exploding on high, very like pancakes.
    • flip and cook the opposite side; transfer to paper towels till all area unit sauteed. Serve with butter and/or the jam of your selection.
